Running

I have caught the running bug once again, thank heavens! 
Just in time for the holiday season says my waist line :) 
My hip flexors are SO tight, my feet are sore, and my ankles are definitely feeling it. But I can already see a difference in my quads, calves, and butt. It is seriously motivating to see results this quickly. The whole time I am running I tell myself to go faster so I can be done quicker. I love how good I feel in my own clothes and whilst eating copious amount of food when I am in a good running routine.
I really run for dessert. 
Hooray for speeding up my metabolism :)

This week I have logged 16 miles! That is just week one of my 12 week training schedule. The week is structured so that sundays are the high milage days to prepare for a half marathon since they are almost ALWAYS on Sundays. 
My plan is to see how I feel about running long distance and if I would like to do another half. Honestly I dont feel the need to do one again, the first time was great, I finished. 
End of story. 
But who knows, maybe once the miles get easier and go by faster I will be more competitive and want to better my time... maybe.

In the nice time- I will enjoy the ride!

one of my favorite salads

Today was a long day.
Not a stressful kinda long day. However it was full of job interview butterflies, FAFSA papers, transcript request forms,  Centergy (yoga and pilates combined), AND preschoolers :)
Nuff' said.
Nothing a fresh spinach salad couldn't fix. Feisty forces tried to persuade me to go to the frozen goodness aisle for a pint of my 2 best friends, Ben and Jerry. *Que internal motivation. 
I keep telling myself "You have this one day to make good choices, and if you mess up you have to wait till tomorrow for a re-do"
So far its been working for me.



This salad is very simple and easy!
Ingredients:
Spinach
Boysenberries (or blue berries)
Blue cheese
walnuts
green apple
balsamic and olive oil (I sometimes use the italian seasoning dressing packet and substitute the vinegar for balsamic for a very delicious balsamic vinaigrette)

My Marvelous Murdock Man...

All I had to do was say, 
"Babe I am craving something sweet, something chocolate, something coconut..."
and that was it, he was on it in in seconds in  the kitchen. When he gets in MURDOCK MODE it is quite a site. 
I marveled as he created the most delicious dessert for us.
tortillas fried in coconut oil
topped with powdered sugar
with a dab of nutella (:
 

and a little peanut butter here and there

We realized we could use cookie cutters and make shapes next time. Oh the possibilities.

We started a stew yesterday. Slow and low all night last night. It is amazing, we plan on adding to it all week long. None of our produce is going to waste!
Who knows how long we will keep it going!

Breakfast in Bed

I don't know why I have such an obsession with food, but really I do. I love eating so eating nutritionally healthy well balanced meals is in my caloric intakes best interest. My favorite meal of the day is breakfast, and when I say "day" I mean any time of day.


FIRST tip on cooking a healthier breakfast- try coconut oil or olive oil instead of butter to fry or slap on toast.
SECOND- wheat instead of white pretty much always
THIRD - always incorporate fruit
FOURTH - try to get some protein in there... egg whites are the best, or a handful of almonds will do.
LAST but not least NEVER skip breakfast! No matter how much of a hurry you are in it is the most important meal of the day! Our bodies metabolism start as soon as we feed it. If you are trying to lose weight, or simply maintain weight, breakfast is vital. Something as small as handful of blueberries with a banana would suffice if you're on the run, no matter what don't skip! Skipping may lead to bigger, heavier meals later in the day that are unnecessary  for our daily diet. My motto is "Eat like a cow and graze all day!"
